Aroma
The complexity of this wine increases year after year. Raspberry and strawberry jam, drunken cherries, licorice, nutmeg, coconut and vanilla are followed by the first hints of an ethereal scent that recalls resin and a slight note of hairspray. It is very intense and wide; it can surprise with each time that it’s brought close to the nose.
Palate
A harmonious dance of flavors; the warm and velvety entrance of the tannins explode the first time it’s tasted, then they give way to all the aromatic bouquet that are felt at the olfactory exam. It’s a perfect fusion of fruity, spicy, floral and ethereal notes; all of them make the wine complex, persistent and elegant.
Food suggestions
Great meditative wine; it perfectly pairs with red meats and all kinds of game, roasted or stewed. Braised meat, pride of the regional cuisine of Piedmont, is particularly good with this Barolo. We suggest an interesting pairing with dark chocolate (85% at least). It is recommended to open or decant the wine at least an hour before serving.
